The Dover sole, also known as common sole or black sole, ranges from southern Norway to Senegal in the Eastern Atlantic ocean. This popular seafood species was named after Dover, England, the fishing port which brought in the most sole in the 1800s. Like other flatfish, they hatch with eyes on each side of the head, but the eyes migrate to one side as they develop. They are a solitary species, with camouflage patterns that allow them to bury into the sand and catch prey by surprise. They tend to prefer shallow waters, feeding at night on worms, mollusks and other invertebrates.
